The heat index this weekend is about 115 degrees. Walking outside is like walking into a hot oven. I am tempted to try and bake a skillet cookie on the sidewalk to save on electricity. There is certainly no chance I am turning on that oven today when the a/c is already working overtime trying to keep the house a sane temperature. No, no, no. Instead I want something cool and refreshing.

I’ve been ordering boxes from Plated since they first started in I think it was 2013. Meal subscription services were just starting to gain popularity and they were becoming one of the bigger companies after Hello Fresh. I loved their meals. They were incredibly delicious and their international flavors really fit what I craved. When I heard they were releasing a cookbook, I was beyond excited. I kept all the recipe cards from their boxes so I could recreate each of my favorite dishes whenever I wanted and to have a cookbook of theirs meant I could try even more of what they have to offer.
The Plated cookbook has everything. It is geared toward delicious weeknight dinners and hosting bigger meals with guests. The weekend meals and holiday meals are put in sections with menus and recipes for everything in the menu. It is really organized and all the weeknight meals are very easy to make. The only drawback is they are made for two servings only, so you need to double or triple the recipe if you have a larger family. It’s not a big deal, but a bit inconvenient for people like me who struggle with even simple multiplication – especially if it involves fractions.
You are probably wondering why I decided to make this mocha coffee granits out of every delicious meal that is in here. The answer is simple: it’s hot out and I didn’t feel like cooking. Plus, I’ve been craving coffee granita for the longest time and knew their recipe would be a great starting point.
Their recipe is for a traditional coffee granita, which I spruced up a bit with chocolate for a more decadent mocha flavor. It is so easy to make and requires zero skill. The perfect recipe to serve when you’ve already been working hard on dinner and don’t have the time or energy to do anything else, but still want to impress.
- 1⅓ cups hot coffee
- 1 cup hot espresso
- ⅓ cup cocoa powder
- ⅔ cups granulated sugar
- 1 tablespoon Kahlua (optional)
- pinch of salt
- fresh whipped cream
- Mix together the coffee and espresso, then mix in the cocoa powder, sugar, and Kahlua. Mix well until the sugar and cocoa powder is completely dissolved.
- Pour into a 9 x 13 baking pan and allow to cool to room temperature.
- Freeze for about 30 minutes, then break apart with a fork. Repeat about five more times until the mixture is light and like shaved ice.
- Serve in cups or bowls, and top with fresh whipped cream.
