You know in all my years of blogging, I don’t think I’ve shared a single recipe using watermelon. That’s crazy, right? I mean, once summer hits we have a constant supply of watermelon in the house. My daughter is obsessed with watermelon. My whole family is. So you would think I would have put up a few watermelon related recipes by now. But here we are almost four years into it and this is my very first watermelon recipe. I don’t want to oversell it or anything, but these watermelon mojito popsicles are worth the wait.

I love a good cocktail. You know that from all the cocktails I’ve made recently like this blueberry basil peach fizz and this fresh fig margarita. Being able to turn a cocktail into a popsicle that I can easily transport and enjoy outside without having to worry about breaking glass is just the bees knees. Plus it is the perfect way to stay cool during a barbecue. So many wins for these watermelon mojito popsicles.

The best part about these watermelon mojito popsicles is that they are so simple to make. All you do is add the ingredients to a blender and blend until the watermelon is completely broken down. I like to strain the liquid out of the fibers in the watermelon to make it nicer to eat, but that is completely optional. If you don’t mind it, or are short on time, you can skip that step. I also decided to skip the traditional popsicle molds and use the small Dixie paper cups instead so you don’t even need to trouble yourself with getting one. If you do decided to buy a popsicle mold, this is the one I use. You can also make these kid-friendly by skipping the rum. They will still taste incredible.

A sweet and refreshing watermelon mojito popsicle that will keep you cool and refreshed all summer long.

Serves: 12 popsicles
Ingredients
  • 3 cups watermelon
  • 6 oz white rum
  • 3 tablespoons granulated sugar
  • 3 oz lime juice (fresh!)
Instructions
  1. Add all the ingredients to a blender and blend until the watermelon is pureed.
  2. Strain the ingredients, pressing out as much of the liquid as possible.
  3. Evenly divide the mixture among your popsicle mold wells (or small paper cups) until they are about ¾ full.
  4. Freeze for about 1 hour, then insert your popsicle sticks. Continue to freeze until solid - about another 4 hours.
